Getting
an infrared grill is expensive, but worth the money for the grilling
performance that you get. They don’t dry out your food, especially
some of the newer models. Old models still used a lot of moving hot
air to cook the food, and new ones don’t.
The original infrared grills worked by focusing flame
on ceramic plates that had thousands of tiny holes in them. The heat
would radiate from the plates and cook the food. Now there are all-metal
models coming out that cook food even better.
With the new all-metal infrared grills, you can bring
the temperature of the grill way down and slow-cook your meat. This
would not have been possible with the ceramic plate models. The new
models also provide an even better distribution of heat across the grill.
